We had crab cakes, prime rib, a summer veggie pasta, and some simple sides of roasted potatoes and roasted vegetables. I'm telling you as a crab cake snob, the crab cakes were to.die.for. Compliments from the guests abounded.

We put our heart into every meal and it shows. Our team will design a menu to fit the needs and tastes of your event (minimum of 20 guests). Here’s a look at our traditional options. If you’re looking for something else, request the chef’s specialty menus!


BREAKFAST CONTINENTALS

  • Express Breakfast – Assorted bagels with cream cheese, orange juice, coffee and tea service
  • Traditional Breakfast – Assorted bagels with cream cheese, pastries, muffins, fresh fruit, orange juice, coffee and tea service

TRADITIONAL LUNCHES

  • Sandwich Buffet – Assorted sandwiches including roast beef, turkey breast, ham and cheese, tuna salad and vegetarian served on assorted rolls and breads. Sandwiches are accompanied by condiments, pasta salad, coleslaw, chips, seasonal fruit and cookies. Served with select beverages.
  • Soup & Salad Bar – A wide range of seasonal crudites including shredded carrots, sliced bell peppers, broccoli and zucchini accompanied by chicken, tuna, pasta and caesar salads, crackers, cheese, fruit and more. The Salad Bar is accompanied by two homemade soups. Served with select beverages.

HORS D’OEUVRES

  • Hummus in Two Styles – Traditional garlic with lemon garbanzo beans and herbed white bean hummus are served with pita bread, whole grain breads and bagel chips
  • Mini Bruschetta – Two kinds for every palate! The first is sliced French baguette topped with pesta sauce, tomato and fresh mozzarella. Second is sliced French baguette topped with blue cheese, pecans, apples, and drizzled with a smoky olive oil. Both selections are toasted and served warm.
  • Fruit Display – Seasonal fruit in a creative display with sweet dipping options
  • Crudites & Dip – Broccoli, cauliflower, baby carrots, celery, grape tomatoes, peppers, cucumbers, marinated mushrooms and asparagus served with a buttermilk and herb dressing
  • Imported & Domestic Cheeses – Brie, blue, cheddar, swiss, pepper jack, feta, herbed goat and gouda served with an assortment of crackers
  • Chef’s Amazing Crab Dip - Camp Letts’ Crab Dip satisfies all crab lovers – from Maryland crab aficionados to newer palates. It’s served hot in a creamy cheese sauce full of jumbo lump crab meat with sliced French bread and an assortment of crackers.

TRADITIONAL DINNER BUFFETS

All dinner buffets are served with roasted red potatoes, fresh vegetable medley, spicy sesame pasta, mixed green salad, fresh baked rolls and select beverages.

  • Roast Beef & Boneless Chicken Breast – Roast beef (top round) is seasoned, oven roasted and served medium well. Chicken is marinated in a light, herbal recipe. Add crab imperial for an extra $2 per person!
  • Chesapeake Bay Crab Cakes & Boneless Chicken Breast – Our crab cakes are made with jumbo lump crab and the Chef’s own Maryland Style recipe. Chicken is marinated in a light, herbal recipe.
  • Chesapeake Bay Crab Cakes & Roast Beef – Our crab cakes are made with jumbo lump crab and the Chef’s own Maryland Style recipe. Roast beef (top round) is seasoned, oven roasted and served medium well.
  • Beef Tenderloin Medallions & Boneless Chicken Breast – Beef tenderloin medallions are cooked and served medium in a mushroom brandy demi-glace. Chicken is marinated in a light, herbal recipe.

VEGETARIAN DINNER BUFFETS

  • Eggplant Parmesan, Tofu Meatballs & Penne Pasta – Lightly floured eggplant sauteed then layered with fresh marinara sauce and fontina, ricotta and asiago cheeses. Tofu meatballs are served in our fresh marinara. The penne pasta is tossed with homemade sundried tomato and cream sauce. Accompanied by sauteed vegetables, mixed green salad, assorted dressings, fresh baked dinner rolls and select beverages.
  • Spinach & Mushroom Lasagna – Sauteed fresh baby spinach and mushrooms stuffed between thin tender lasagna noodles layered with fontina, ricotta and asiago cheeses. Served with baby carrots, zucchini, sweet potatoes, asparagus and green beans roasted to perfection with olive oil and a blend of spices and herbs. Accompanied by homemade saffron rice mixed with cannellini beans, mixed green salad, assorted dressings, fresh baked dinner rolls and select beverages.

PICNICS

  • Camp Cookout – Premium all beef hamburgers and hotdogs grilled to perfection along with vegetarian options. Served with coleslaw, baked beans (includes vegetarian beans), chips, condiments, watermelon and select beverages.
  • Traditions from the Grill – BBQ chicken and ribs, premium all-beef hamburgers and hotdogs grilled along with vegetarian options. Served with coleslaw, pasta salad, baked beans (includes vegetarian beans), chips, condiments, watermelon and select beverages.
  • Grill & Pit - Grill & Pit includes all items from the “Traditions from the Grill” menu plus a choice of 2 of the following: smoked pit beef, smoked pit turkey, pulled BBQ pork, pulled BBQ beef and italian sausages with peppers and onions.

A LA CARTE

  • Individual Sides – Pick from potato salad; black beans and rice; cucumber, onion and dill salad; corn on the cob; and macaroni salad
  • Steamed Crabs & Shrimp (market price)
  • Drinks – Assorted sodas and bottled water OR coffee and tea service
